Recipes for food from the book - From the Lighthouse
Some helpful information for reading recipes:
tbsp. = tablespoon
tsp. =teaspoon
c. = cup
"preheat" means you should turn the oven on before you start mixing ingredients.
"Can you make that chocolate cake like Ma makes?" asked Clayton.
I handed him a can of cocoa. "Ma's got the recipe written down somewhere. We'll find it."
Ma's Chocolate Cake
1. Pre-heat the oven to 300 degrees. You don't need to grease a pan for this; it is baked in an ungreased pan. There are no eggs in this recipe.
2. Mix together in a bowl:
- 1 ½ c. flour
- 1 c. sugar
- 3 tbsp. cocoa
- 1 tsp. baking soda
- 1 tsp. salt
3. In a glass measuring cup put:
- 1 tsp. vanilla
- 6 tbsp. vegetable oil
- 1 tbsp. vinegar
4. Pour that into the dry stuff in the bowl. Don't mix it yet. Now fill the measuring cup with:
- 1 c. cold water
5. Pour the cold water in with everything else in the bowl and mix it all up. When it is mixed well, pour the batter into an ungreased cake pan. Either an 8x8 square pan or an 8 to 9 inch round pan works well. Bake in the oven for 25-30 minutes.
6. When the cake is cool, you can sprinkle confectioner's sugar on the top or frost with your favorite frosting. (Mine's peanut butter!)
Cornmeal, flour, eggs and milk. I dumped ingredients into a big crockery bowl and began to stir with one of Ma's big wooden spoons until I realized I had forgotten to put baking powder in.
Corn Bread (johnnycake)
1. Preheat the oven to 425 degrees. Grease an 8x8 square pan with butter or cooking spray.
2. In a large bowl, stir together:
- 1 c. corn meal
- 1 c. flour
- 4 tsp. baking powder
- ½ tsp. salt
3. Add to the same bowl:
- 1 c. milk
- 1 egg
- 1/4 c. vegetable oil
